Greek Style Green Beans (Fasolakia)
This is Greek comfort food at its finest...healthy, filling and delicious. These green beans make a great meal...just add your favorite crusty bread and some feta cheese. So good!
- Extra Virgin Olive Oil
- 1 bunch scallions, finely chopped
- 2 cloves garlic, minced
- 1 t ground cumin
- 2 t oregano
- 28 oz chopped tomatoes
- 1 C water
- 1 bay leaf
- 3 celery stalks, sliced
- 24 oz green beans (frozen or fresh)
- 1/2 t salt
- 1/4 t pepper
- 1/2 C fresh parsley, chopped
In a large pan, heat a generous amount of olive oil over medium heat. Add the scallions, green beans and celery and cook until tender.
Add garlic, cumin, and oregano. Stir to combine.
Add tomatoes, water, and bay leaf. You may need to add more water...adjust as needed.
Season with salt and pepper. Bring to a boil and then simmer for 15 to 30 minutes or until green beans are tender.
Add the fresh parsley and enjoy!
