Greek Style Green Beans (Fasolakia)

This is Greek comfort food at its finest…healthy, filling and delicious. These green beans make a great meal…just add your favorite crusty bread and some feta cheese. So good!

Ingredients

  • Extra Virgin Olive Oil
  • 1 bunch scallions, finely chopped
  • 2 cloves garlic, minced
  • 1 t ground cumin
  • 2 t oregano
  • 28 oz chopped tomatoes
  • 1 C water
  • 1 bay leaf
  • 3 celery stalks, sliced
  • 24 oz green beans (frozen or fresh)
  • 1/2 t salt
  • 1/4 t pepper
  • 1/2 C fresh parsley, chopped

Instructions

  • In a large pan, heat a generous amount of olive oil over medium heat. Add the scallions, green beans and celery and cook until tender.
  • Add garlic, cumin, and oregano. Stir to combine.
  • Add tomatoes, water, and bay leaf. You may need to add more water…adjust as needed.
  • Season with salt and pepper. Bring to a boil and then simmer for 15 to 30 minutes or until green beans are tender.
  • Add the fresh parsley and enjoy!
