Even the non-spinach lovers, will love these spinach squares. They are always a welcome addition to any meal, party or gathering. They’re amazing hot out of the oven, at room temperature or right out of the refrigerator. My entire family loves them and yours will too!
Spinach Squares
These quick and easy Spinach Squares make the best appetizer, main dish or side dish, and they will always please a crowd. You can enjoy them for any meal or snack throughout the day because they are filling, healthy and delicious.
Ingredients
- 20 oz frozen chopped spinach, thawed and drained
- 4 T softened butter
- 1 C Bob's Red Mill Brown Rice Flour
- 1 t baking powder
- 4 C shredded cheddar cheese
- 3 eggs, beaten
- 1 C milk
- 1/2 C chopped scallions
Instructions
- Preheat oven to 350 degrees. In a large mixing bowl, beat eggs and then add butter, flour, milk and baking powder; mix well. Stir in cheese, scallions and spinach. Butter a 9×13 inch glass baking dish and spread the spinach mixture in the pan. If making ahead, cover tightly and place in refrigerator for up to 24 hours. Otherwise, bake for 30-35 minutes or until center is set. Enjoy!
Notes
• I prefer to use Bob’s Red Mill Brown Rice Flour because it doesn’t leave a gritty taste…you won’t even notice the flour.
• If you love feta as much as I do, try substituting 1 1/2 – 2 cups of crumbled feta cheese for the cheddar cheese. So good!!

Delicious! I love spinach squares. I fed them to my toddlers as “spinach nuggets” and we still enjoy them when we don’t feel like having chicken nuggets. Your recipe is a little different than mine. I look forward to trying yours. Thanks for posting!
