Healthy and Delicious Gluten Free Banana Bread/Muffin Recipe

Moist…healthy….gluten free…dairy free…sweetened only with organic, raw honey….absolutely delicious! This banana bread is super quick and east to make. It will be your "go to" banana bread recipe, and everyone will thank you for it. P.S. Double the recipe because it goes quickly!

Ingredients

  • 1/3 C extra virgin olive oil
  • 1/2 C organic, raw honey
  • 2 eggs
  • 1 C mashed, ripe bananas (about 3 small bananans)
  • 1/4 C unsweetened applesauce
  • 1 t vanilla extract
  • 1 t baking soda
  • 1 t xanthan gum
  • 1/2 t ground cinnamon
  • 1/4 C arrowroot starch
  • 1 ½ C brown rice flour

Instructions

  • Preheat oven to 350 degrees. Spray a 9×5 inch loaf pan with olive oil. Mix together the brown rice flour, arrowroot flour, cinnamon, xanthan gum and baking soda; set aside. In a large mixing bowl, beat the olive oil and honey until smooth. Add the eggs one at a time, beating well after each addition. Add the applesauce, vanilla and mashed bananas and mix well. Add the flour mixture and mix on low speed just until combined.
  • To make a bread, pour the batter into the greased loaf pan. Bake for 50-55 minutes, or until a toothpick inserted in center comes out clean. Allow the bread to cool in the loaf pan for 10 minutes, and then transfer to a wire rack to cool completely.
  • To make muffins, line a muffin pan with cupcake liners and spoon the batter evenly into each liner. Bake for 20-25 minutes, or until a toothpick inserted in center comes out clean. Allow the muffins to cool in the muffin pan for 5 minutes, and then transfer to a wire rack to continue cooling.

Notes

Banana Pineapple Bread/Muffins
Add 20 ounces of crushed, well-drained unsweetened pineapple with the mashed bananas.
