Spinach Squares
These quick and easy Spinach Squares make the best appetizer, main dish or side dish, and they will always please a crowd. You can enjoy them for any meal or snack throughout the day because they are filling, healthy and delicious.

- 20 oz frozen chopped spinach, thawed and drained
- 4 T olive oil
- 1 C Bob's Red Mill Brown Rice Flour
- 1 t baking powder
- 4 C shredded cheddar cheese
- 3 eggs, beaten
- 1 C milk
- 1/2 C chopped scallions
- 1 tbsp dill, chopped
Preheat oven to 350 degrees. In a large mixing bowl, beat eggs and then add olive oil flour, milk and baking powder; mix well. Stir in cheese, scallions, dill and spinach. Spray a 9x13 inch glass baking dish with olive oil and spread the spinach mixture in the pan. If making ahead, cover tightly and place in refrigerator for up to 24 hours. Otherwise, bake for 30-35 minutes or until center is set. Enjoy!
• I prefer to use Bob's Red Mill Brown Rice Flour because it doesn't leave a gritty taste...you won't even notice the flour.
• If you love feta as much as I do, try substituting 1 1/2 - 2 cups of crumbled feta cheese for the cheddar cheese. So good!!
