Navy Bean Dip

Equipment

Ingredients

  • 1 15- ounce can navy beans drained and rinsed
  • 2 tablespoons fresh lemon juice
  • 1/2 cup olive oil plus a little a little more to drizzle on top
  • 2 tablespoons Litehouse Freeze Dried Parsley fresh parsley can be used as well
  • 1/4 teaspoon black pepper
  • 1 teaspoon chopped fresh parsley or Litehouse Freeze Dried Parsley
  • 1 tablespoon chopped scallions
  • Salt to taste

Instructions

  • Place all ingredients in a food processor and pulse until smooth. Transfer the pureed dip to a bowl, drizzle with olive oil and sprinkle with one teaspoon chopped parsley and one tablespoon chopped scallions, if desired.
