Greek Style Green Beans (Fasolakia)
This is Greek comfort food at its finest…healthy, filling and delicious. These green beans make a great meal…just add your favorite crusty bread and some feta cheese. So good!
Ingredients
- Extra Virgin Olive Oil
- 1 bunch scallions, finely chopped
- 2 cloves garlic, minced
- 1 t ground cumin
- 2 t oregano
- 28 oz chopped tomatoes
- 1 C water
- 1 bay leaf
- 3 celery stalks, sliced
- 24 oz green beans (frozen or fresh)
- 1/2 t salt
- 1/4 t pepper
- 1/2 C fresh parsley, chopped
Instructions
- In a large pan, heat a generous amount of olive oil over medium heat. Add the scallions, green beans and celery and cook until tender.
- Add garlic, cumin, and oregano. Stir to combine.
- Add tomatoes, water, and bay leaf. You may need to add more water…adjust as needed.
- Season with salt and pepper. Bring to a boil and then simmer for 15 to 30 minutes or until green beans are tender.
- Add the fresh parsley and enjoy!
