Olive Oil Koulourakia

These dairy free cookies are so good on their own or with a cup of hot coffee or tea.

Ingredients

  • 2/3 cup olive oil
  • 1/2 cup honey
  • 1 egg
  • 1 T orange juice
  • 1 t vanilla
  • 1/4 cup arrowroot flour Bob's Red Mill
  • 2 1/4 cups brown rice flour Bob's Red Mill
  • 1/2 t xanthan gum
  • 1 t baking powder
  • 1 egg, beaten & mixed with a little water

Instructions

  • Preheat oven to 350°F and line a baking sheet with parchment paper.
  • Add the first five ingredients to a mixing bowl and mix well. Add the remaining ingredients and mix until combined. If mixture is a little sticky, add more flour one tablespoon at a time, mixing well after each addition. Do this until dough can be easily shaped.
  • Use a cookie scoop to form a 1-inch ball of dough and form into an "s" shape, twists or your favorite shape. Place the shaped cookies on the parchment paper lined baking sheet. Brush tops with the egg/water mixture and bake for 15 to 17 minutes.
