Hello and welcome to Simply Susie’s. During the last 6 years, I have learned how to eat simply, be healthy and love life…and I have never felt better. When I was diagnosed with celiac disease six years ago, my doctor told me to forget about how I used to live and accept that I have a new way of life now. It took me some time to figure out the details of that new life, but who would have thought that my new normal would be significantly better than my old way of life. A diagnosis of celiac disease doesn’t need to be viewed negatively…instead, I chose to view it as an opportunity to learn as much as possible and get healthy.

I’m so lucky that I don’t need a prescription to control my disease. My prescription is food. Oh…and wine! I forgot to mention the other fun advice from my doctor. He told me to not become anti-social and that, no matter what, I can always have a salad and a glass of wine. You can absolutely believe that I have followed THAT advice religiously.🍷
I started this blog to help people enjoy food and life again. It’s totally possible to have limitations and still live a happy, healthy and exciting life…I’ve done it and you can too. Your disease (and food) shouldn’t control you. I’ve learned how to control my disease, so my disease does not control me. The result? A happy, healthy delicious food-filled life. You can have this too, and I’ll show you how.
